Ultimate Potatoe Soup

Ingredients

  • 8 cups diced potatoes (we use red ones softened quicker)
  • 5 stalks celery, diced
  • 1 chopped onion
  • 2 cans chicken broth
  • 4 cups half-and-half cream
  • 2 cups milk (you might add more it depends on the thickness you want)
  • 10 tablespoons butter, melted
  • 2 tablespoons all-purpose flour
  • 4 cubes chicken bouillon
  • 1/2 teaspoon ground black pepper
  • 1 lb bacon (cooked and crumbled)
  • 1/3 cup chopped basil
  • 1/3 cup chopped parsley
  • 1 clove minced garlic

Directions

  1. In a large pot, bring potatoes, celery and onion to a boil in 2 cups of broth.  Stir until thickened and potatoes softened then add other ingredients. Heat through and serve.
MIND YOU I tried to follow my husband around in kitchen while he made this so I might be off a little here and there since he doesn't measure everything.

Holeman Chili


Ingredients:
2 lbs hamburger
1 medium onion
1 package McCormick Chili Seasoning
1 can refried beans
1 can rotel
2 cans chili beans
2 16jars of chunky salsa
1/2 t. cumin
1/2 t. chili powder

Directions:
Brown hamburger with Onions.  Add remaining ingredients and stir until heated through.  Serve with cheddar cheese sprinkled on top.

The hotter styles of beans,rotel,and salsa used makes this spicy or mild.

Santa Fe Soup

Ingredients:
  • 1/2 block cubed Velvetta
  • 1 can rotel
  • 1 can corn (drained)
  • 1 can kidney beans (drained)
  • 1 lb hamburger
  • 1 med onion chopped
Directions:
  1. Brown hamburger add onions
  2. Combine all other ingredients and slowly simmer for 30-45min or untill cheese melted
    *Step two can be finished in a crock pot as well
THIS IS A MAN PLEASING SOUP!!!
Goes good with corn bread, corn chips or as shown sourdough bread.
