Ultimate Potatoe Soup

Ingredients

  • 8 cups diced potatoes (we use red ones softened quicker)
  • 5 stalks celery, diced
  • 1 chopped onion
  • 2 cans chicken broth
  • 4 cups half-and-half cream
  • 2 cups milk (you might add more it depends on the thickness you want)
  • 10 tablespoons butter, melted
  • 2 tablespoons all-purpose flour
  • 4 cubes chicken bouillon
  • 1/2 teaspoon ground black pepper
  • 1 lb bacon (cooked and crumbled)
  • 1/3 cup chopped basil
  • 1/3 cup chopped parsley
  • 1 clove minced garlic

Directions

  1. In a large pot, bring potatoes, celery and onion to a boil in 2 cups of broth.  Stir until thickened and potatoes softened then add other ingredients. Heat through and serve.
MIND YOU I tried to follow my husband around in kitchen while he made this so I might be off a little here and there since he doesn't measure everything.
